Welcome to the Internet Symposium on Food Allergens,

Two foods which are major allergens in infancy world wide and which are extensively used as food ingredients in processed foods are presented in the current issue of the Internet Symposium on Food Allergens. The Allergen Data Collection on Cow's Milk (Bos domesticus) and the updated Allergen Data Collection on Hen's Egg White (Gallus domesticus) (Supplement 1) are presented. The current challenges of cow's milk allergy (CMA) are apparent from its multifacetted medical conditions for many of which the mechanisms responsible are still controversial. Nonetheless a vast knowledge has been acquired in the past few years. The data collection gives an extensive overview of the advances in CMA research.
In addition two food allergens which are involved in so-called oral allergy syndrome (OAS) are the subject of the updated Allergen Data Collection on Kiwi Fruit (Actinidia chinensis) (Supplement 2) and an Original article on Effects of in vitro Digestion on the IgE-binding Activity of Proteins from Hazelnuts (Corylus avellana).

Here I would like to thank especially the co-authors of the Allergen Data Collections for their fruitful and encouraging cooperation in the work. We have done our best to collect the most important papers and to cover the most recent information and developments in food allergy research.
